Chocolate Concorde



Ingredients for 6 persons:

For the meringue:
4 egg whites
100g icing sugar
50g bitter cocoa
150g semolina

For the filling:
500g chocolate mousse
butter and flour for the plate

Sift cocoa and icing sugar together.
Whisk egg whites until stiff and add 20 grams of sugar.
When whites are mounted, add sugar, beating at low speed, then the icing sugar and cocoa.

Grease and flour the plate you preheat the oven 4 th.
